Ingredients:
Butter - 30 gms
Oil - 2 tbsp
Brown Stock - 1 liter
Garlic - 2 flakes
Bay Leaf - 1
Sugar - 1 tsp
White wine vinegar - 1tsp
Bread - 8 thin slices
Cheddar cheese - 60 gms
Grated pepper - to taste
Salt -to taste
Ground spices - a pinch
- Julienne the onions
- Heat butter, add oil in a pan.
- Add onions & garlic and fry till soft
- Increase heat continue frying, stirring frequently until onion becomes Golden brown & becomes caramelized.
- Add bay leaf, sugar, vinegar, all spices, stock & ring to a boil.
- Cover the pan and simmer for 30 mins.
- Remove bay leaf and adjust seasonings
- Toast one side of bread & grill. Sprinkle cheese & turn. (repeat on the other side)
- Heat soup again, add bread slices, sprinkle chopped parsley, allow bread to soak.
Serve Hot. Enjoy
